Cold-assembled in minutes, this platter lets quality smoked salmon do the work.
1. Whisk together the sour cream, heavy cream, horseradish, lemon juice, white pepper, and chives in a small bowl until smooth and pourable; transfer to a small ceramic pitcher or pouring vessel.
2. Lay the smoked salmon slices flat, then fold or roll each loosely and fan them in an overlapping arc across a large wooden board or serving platter.
3. Tuck lemon wedges evenly around the salmon, then scatter capers over and between the slices.
4. Lay fresh dill sprigs across the arrangement, distributing them so the feathery fronds are visible.
5. Just before serving, slowly pour the cream dressing from the pitcher in a thin stream over the salmon, letting it pool naturally across the platter.
6. Serve immediately with crackers, rye bread, or cucumber slices on the side.
