Ingredients

  • 500g russet potatoes, boiled and mashed
  • 2 tbsp fresh cilantro, finely chopped
  • 1 tsp cumin seeds
  • 1 tsp garam masala
  • 1/2 tsp red chili powder
  • 1 tsp amchur (dried mango powder)
  • 1/2 tsp ground coriander
  • 1 green chili, finely minced
  • 1 tbsp cornstarch
  • 2 tbsp oil for pan-frying
  • 1 cup fresh mint leaves
  • 1/4 cup fresh cilantro
  • 1 clove garlic
  • 1 tbsp lemon juice
  • 1 green chili
  • 1/4 tsp salt

Steps

  1. 1

    1. Combine the mashed potatoes with cumin seeds, garam masala, chili powder, amchur, ground coriander, green chili, cilantro, and cornstarch in a bowl; mix until evenly incorporated.

  2. 2

    2. Divide the mixture into 6 equal portions and shape each into a round, flat patty about 1cm thick.

  3. 3

    3. Blend the mint leaves, cilantro, garlic, green chili, lemon juice, and salt with a splash of water until smooth to make the chutney; set aside.

  4. 4

    4. Heat oil in a flat skillet over medium heat until shimmering, then place the patties in without crowding.

  5. 5

    5. Cook each patty for 3–4 minutes per side, pressing gently, until deeply golden and crisp on both sides.

  6. 6

    6. Drain briefly on paper towel and serve immediately alongside the mint chutney.
