A moist, spiced loaf with a honey-glazed crust — straightforward and deeply flavored.
1. Preheat the oven to 350°F (175°C) and grease a 9x5 inch loaf pan. Whisk together the dry ingredients — flour, baking soda, salt, and all spices — in a large bowl.
2. In a separate bowl, whisk the pumpkin puree, eggs, oil, both sugars, and vanilla until smooth and well combined.
3. Pour the wet mixture into the dry ingredients and fold gently with a spatula until just combined — do not overmix or the loaf will be tough.
4. Pour the batter into the prepared pan and smooth the top. Bake for 60–65 minutes, until a skewer inserted in the center comes out clean.
5. Let the loaf cool in the pan for 10 minutes, then turn it out onto a wire rack. While still slightly warm, drizzle honey over the top crust and let it pool and set before slicing.
