A warmly spiced, tender loaf with a domed crust and deep pumpkin flavor throughout.
1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan, then lightly flour it.
2. In a large bowl, whisk together the pumpkin puree, eggs, oil, vanilla, and both sugars until smooth and well combined.
3. In a separate bowl, sift together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger.
4. Fold the dry ingredients into the wet ingredients using a spatula until just combined — do not overmix or the loaf will be tough.
5. Pour the batter into the prepared loaf pan and bake for 60–65 minutes, until a toothpick inserted in the center comes out clean and the top is deeply golden and domed.
6. Cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely before slicing; serve with softened butter.
