Buttery oat bars layered with spiced pear jam, finished with a honey drizzle.
1. Preheat oven to 350°F and line an 8x8-inch baking pan with parchment paper. Cook the diced pears with lemon juice, granulated sugar, cardamom, and ginger in a saucepan over medium heat for 10–12 minutes, stirring occasionally, until the mixture is thick and jammy.
2. In a large bowl, combine oats, flour, brown sugar, and salt. Work the cold butter into the dry mixture with your fingertips until the mixture resembles coarse, clumpy crumbs.
3. Press roughly two-thirds of the oat mixture firmly and evenly into the bottom of the prepared pan to form the base layer.
4. Spread the cooled pear filling evenly over the base, then scatter the remaining oat crumble loosely over the top.
5. Bake for 30–35 minutes until the top is golden brown and the edges are set. Allow to cool completely in the pan before lifting out and slicing into bars.
6. Arrange the bars on a board and drizzle warm honey in a thin stream over the top just before serving.
