A baked egg noodle casserole with a custardy interior and deeply caramelized, crispy top.
1. Preheat the oven to 375°F and grease a 9x13 inch ceramic baking dish generously with butter. Cook the egg noodles in salted boiling water until just shy of al dente, then drain well.
2. In a large bowl, whisk together the eggs, sour cream, cottage cheese, cream cheese, sugar, vanilla, cinnamon, nutmeg, melted butter, and salt until smooth and well combined.
3. Fold the drained noodles into the custard mixture until evenly coated, then pour everything into the prepared baking dish and spread into an even layer.
4. Bake uncovered for 50 to 60 minutes, until the top is deeply golden brown, crispy, and caramelized, and the center is set when gently shaken.
5. Remove from the oven and let rest for 10 minutes before slicing. Scatter fresh dill over the top just before serving.
