⏱ 15 minServes 415 min prep0

Ingredients

  • 250g ripe camembert, rind removed and roughly chopped
  • 60g unsalted butter, softened
  • 100g cream cheese, full-fat
  • 1 small yellow onion, finely diced
  • 2 tablespoons wheat beer (Weissbier), plus extra to drizzle
  • 1 teaspoon sweet paprika, plus extra to garnish
  • 1/2 teaspoon caraway seeds, lightly crushed
  • Salt and freshly ground black pepper to taste
  • 4 radishes, thinly sliced
  • 2 tablespoons fresh chives, finely chopped

Steps

  1. 1

    1. Let the camembert and butter sit at room temperature for 30 minutes until fully softened.

  2. 2

    2. Combine the camembert, butter, and cream cheese in a bowl and mash together with a fork until mostly smooth but with some texture remaining.

  3. 3

    3. Fold in the diced onion, paprika, caraway seeds, and beer, mixing until evenly incorporated. Season with salt and pepper.

  4. 4

    4. Transfer the spread to a serving crock or bowl, smoothing the top slightly.

  5. 5

    5. Garnish with sliced radishes, a scatter of chives, and a dusting of paprika, then drizzle a thin stream of cold beer around the edges just before serving.

  6. 6

    6. Serve immediately with pretzels or dark rye bread.
