A baked egg noodle casserole with a custard interior and a shatteringly crisp, caramelized top.
1. Preheat the oven to 180°C (350°F) and generously butter a ceramic 23x33cm baking dish. Cook the egg noodles in salted boiling water until just al dente, then drain and set aside.
2. In a large bowl, beat together the cream cheese and sour cream until smooth, then whisk in the eggs, milk, melted butter, sugar, vanilla, cinnamon, and salt.
3. Fold the drained noodles into the custard mixture until evenly coated, then pour everything into the prepared baking dish and spread level.
4. Sprinkle the brown sugar evenly over the top, then transfer to the oven and bake for 50–55 minutes, until the edges are set and the top is deeply golden and caramelized.
5. Remove from the oven and rest for 10 minutes before slicing, which allows the custard to firm up for clean portions.
