Maple Glazed Brussels Sprouts

⏱ 30 minServes 310 min prep20 min cook

Ingredients

  • 1 lb Brussels sprouts, halved through the stem
  • 3 tbsp pure maple syrup
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 2 cloves garlic, minced
  • 1 tsp whole grain Dijon mustard
  • 1/2 tsp smoked paprika
  • 1/2 tsp red pepper flakes
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tbsp unsalted butter

Steps

  1. 1

    1. Pat the halved Brussels sprouts thoroughly dry with paper towels — moisture is the enemy of a good sear.

  2. 2

    2. Heat a cast iron skillet over medium-high heat until very hot, then add the olive oil and arrange the sprouts cut-side down in a single layer without crowding.

  3. 3

    3. Cook undisturbed for 5–6 minutes until the cut sides are deeply caramelized and nearly charred at the edges, then toss and cook 3–4 minutes more.

  4. 4

    4. Stir together the maple syrup, apple cider vinegar, Dijon, smoked paprika, and red pepper flakes in a small bowl.

  5. 5

    5. Reduce heat to medium-low, add the garlic and butter to the skillet, stir for 30 seconds, then pour in the glaze and toss to coat everything evenly.

  6. 6

    6. Cook for 2–3 minutes, stirring occasionally, until the glaze thickens and clings to the sprouts, then season to taste and serve directly from the skillet.
