Ingredients

  • 3 medium carrots, peeled and cut into 2-inch batons
  • 3 medium parsnips, peeled and cut into 2-inch batons
  • 3 tablespoons pure maple syrup
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon apple cider vinegar
  • Salt and black pepper to taste

Steps

  1. 1

    1. Preheat the oven to 400°F (200°C). Arrange the carrot and parsnip batons in a single layer in a shallow earthenware or oven-safe dish.

  2. 2

    2. Whisk together the maple syrup, melted butter, olive oil, garlic, cinnamon, nutmeg, and apple cider vinegar in a small bowl, then pour evenly over the vegetables.

  3. 3

    3. Season generously with salt and black pepper, toss to coat, and spread back into a single layer.

  4. 4

    4. Roast for 25 minutes, then remove from the oven, turn the vegetables, and spoon any pooled glaze back over them.

  5. 5

    5. Return to the oven and roast for another 15–20 minutes until the edges are deeply caramelized and the glaze is glossy and sticky.

  6. 6

    6. Scatter fresh thyme over the top and serve directly in the roasting dish while still hot.
